Tsiakkas has a modern approach to Commandaria, and its paid dividends in this delightful example. A dominant Xynisteri provides lemon and lime aromas, sweet apricots and dried figs on the palate, as well as walnuts and almonds, marzipan and toffee. Very fruit dominant, luscious, sweet with a torrent of acid bring balance and freshness. Unfortified, and a pioneer in creating this style.

Method: 10 days sun-drying, yeast selection, no fortification, controlled temperature
Ageing: 3 Years, French & American oak

Aromas: Βergamot, quince, honey, fig
Pairing: Blue cheese, dark chocolate, citrus fruit
